Pineapple Cheesecake



For those of you who LOVE cheesecake - like I do, here is an easy recipe. I have a good one for peanutbutter cheesecake too but this is one that does not require turning on the oven. And it really is pretty. (Sorry these pictures didn't turn out the best - kindda dark)
Pineapple Cheesecake
2 pkg (8oz) cream cheese, softned
1/2 c. sugar
1 can (20 oz) crushed pineapple, drained
1 carton (8 oz) frozen whipped topping, thawed
2 pkgs. (2 oz each) ladyfingers
1 pint fresh strawberries, sliced (ok, I didn't have any but I have eaten this with the berries and they are really good and look so pretty)
IN a large mixing bowl, beat the cream cheese and sugar until smooth. Stir in pineapple. Fold in whipped topping. Place ladyfingers around the sides and on the bottom of a greased 9 in. springform pan. Pour filling into pan. Cover and refrigerate for 8 hours or overnight. Remove sides of pan. Top with strawberries.
